Before being diagnosed with Celiac Disease, Flakely founder and Executive Pastry Chef Chef Lila Colello worked for Wolfgang Puck, The Food Network and in some of the country’s best restaurants.
Unable to work with flour and unwilling to live without croissants, she made it her mission to create French pastries that are “taste-identical” to their wheat-flour counterparts.
